MMMMMM Summer Salads are the best aren’t they? I know we love them. This one is a cinch and you feel good after eating it since it isn’t loaded with fat.

Shredded Chicken and Strawberry Citrus Salad

Shredded Chicken and Strawberry Citrus Salad

A great tasting summer salad that won't make you feel like you need to hit the gym and run a few laps.

Ingredients

  • Romaine
  • Red Leaf Lettuce
  • Spinach
  • Strawberries, sliced
  • Foccacia Croutons
  • Citrus Dressing
  • Shredded Chicken

Instructions

  1. Roast a whole chicken and let cool. Shred the meat and set aside.
  2. Wash your greens and fruit and dry.
  3. Throw everything together and top with THIS Citrus Dressing that I got from an old neighbor back in college. You will LOVE it!

  6. Sounds yummy. I make a similar salad with a poppy seed vinegrette. I'll put it on here sometime. I would add a suggestion. Chunk up some Asiago, Fresh Parmesan, or Mizzithera (not sure how this is spelled) to toss in. Yummy!!
