Penne Alfredo

This is a quick and easy meal that will add 15 pounds to your waistline and happiness to your soul. ;)
I looooove how creamy and flavorful this alfredo turned out. None of that weird, bland white sauce going on here. The Knorr Homestyle stock adds loads of flavor and depth to the sauce while the Neufchatel adds a mellow creaminess. I love that you can turn a basic into so many things… as you will see throughout this week.

Alfredo Sauce

1/2 cup butter, unsalted
1 Large Garlic Clove, minced
1 Tub Knorr Homestyle Chicken Stock
1 (8 ounce) package Neufchatel Cheese (or cream cheese if you want to gain a little more weight)
1 Cup Heavy Cream
1 Cup Whole Milk
1/3 Cup Parmesan Cheese, grated
1/8 teaspoon ground black pepper
1 Box Penne Pasta, cooked. 

Melt the butter in a medium sauce pan over medium heat. Add the garlic, stirring with a wooden spoon. Cook 1 min or until fragrant.

Add the tub of homestyle stock, whisking until smooth. Add the neufchatel cheese and continue to whisk until smooth.

Slowly add the milk and heavy cream. Turn the heat down to low and simmer the sauce. Continue to whisk to remove any lumps. Once the mixture is smooth add the parmesan cheese and whisk the sauce until the cheese is well distributed.Add a little pepper and serve immediately over cooked penne pasta. This would be delicious with grilled chicken or just a side of fresh veggies.
