I have such a love for mangoes. It took me years to even think about trying them. I have no clue why. I didn’t think they would be gross, I just didn’t grow up on them and really didn’t think about branching out from my favorites. Anyway, I love it now and the other night we knew we wanted steak for dinner, but I wanted to jazz it up a bit. We decided on a Grilled Flank Steak with Mango ChimiChurri and we looooooved it.

The mango chimichurri is so flavorful and perfect for a summer evening.

You can’t help but ache for all of those solidiers, POWs and their families. What a horrendous ordeal.

 And just think, crazy things are happening every day and their stories will never be told here on this earth. Our world truly needs more good in it. I love the thought that each of us can be true for just one day, then the next, and the next, and so on. If you haven’t read the book you should. It is so inspiring. I cannot help but think about how truly blessed we are in so many ways. Whether you have everything or nothing at all it is probably more than what Louie had to endure and we are probably not being tortured, humiliated, beaten etc. It becomes far too easy to forget to be thankful. I hope I can continue to be grateful for what I have and the people surrounding me. I have no need to be someone big, rich, famous and to have a home that is exquisite and travels that amaze. I would much rather be the best that I can be, and do a little good around me. Just think, if we all gave up a little and took better care of one another our own lives would be happier, healthier and more peaceful which would slowly begin to spread to those around us and so forth. We can do and be so much more than we are today. Don’t you think?

What Is Flank Steak?

Flank Steak is also known as skirt steak.

Flank steak is cut from the abdominal muscles or lower chest of the cow.

Some stores carry flank steak under the name of London Broil, while others consider London Broil to be cuts of meat taken from the round, or the butt of the cow.

Is Flank Steak Tough?

Flank steak has tons of intense beefy flavor but can be a little tough.

Flank steak is usually served thinly sliced and cut against the grain for maximum tenderness.

What Is Chimichurri?

Chimmichurri is an uncooked sauce used for grilled meat.

It is commonly made of finely chopped parsley, minced garlic, olive oil, oregano and red wine vinegar.

Grilled Flank Steak with Mango ChimiChurri

The mango chimichurri is so flavorful and perfect for a summer evening.

Ingredients 

For the Steak

  • 1 Onion, sliced
  • 1 Tablespoon Cumin
  • 1 Tablespoon Chili Powder
  • 2 Limes, Juiced
  • 1 Tablespoon Honey
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Fresh, black Pepper
  • 1 Tablespoon Vinegar
  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic, Minced
  • 1/2 Cup Cilantro, chopped
  • Crushed red pepper flakes to taste, I did two sprinkles
  • 1 Flank Steak

Mango ChimiChurri

  • 2 teaspoons Vinegar
  • 1/4 Cup Olive Oil
  • 3/4 teaspoon Sea Salt
  • 1/4 teaspoon Pepper
  • 1 Pinch Red Pepper Flakes
  • 1/2 teaspoon Oregano
  • 1 Clove Garlic, Large, minced
  • 1 Mango, Large, peeled, and diced
  • 1/4 Cup Cilantro, chopped

Instructions 

For the Steak

  • Mix together all of the ingredients in a large bowl.
    1 Onion, 1 Tablespoon Cumin, 1 Tablespoon Chili Powder, 2 Limes, 1 Tablespoon Honey, 1 teaspoon Kosher Salt, 1/2 teaspoon Fresh, 1 Tablespoon Vinegar, 2 Tablespoons Olive Oil, 2 Cloves Garlic, 1/2 Cup Cilantro, Crushed red pepper flakes to taste
  • Add the flank steak and toss to coat.
    1 Flank Steak
  • Wrap the bowl with saran wrap and place in the fridge to marinate for 3 hours or overnight. Overnight is clearly better for flavor, but even an hour of marinating is better than none at all.
  • Remove the meat from the fridge and let rest on the counter for 5-7 minutes to take the chill off the meat.
  • Heat a grill to high heat and place the meat directly on the grill.
  • Grill the meat for about 4-7 minutes per side depending on the size of the meat. Flank steak should be cooked to medium for the best flavor and texture.
  • Remove from the grill and tent with foil for 5-10 minutes.
  • Slice thin and drizzle with the chimichurri.

Mango ChimiChurri

  • In a small bowl whisk together the vinegar, olive oil, sea salt, pepper, red pepper flakes, oregano and garlic.
    2 teaspoons Vinegar, 1/4 Cup Olive Oil, 3/4 teaspoon Sea Salt, 1 Pinch Red Pepper Flakes, 1/4 teaspoon Pepper, 1 Clove Garlic, 1/2 teaspoon Oregano
  • Add the mango and cilantro and stir to combine.
    1/4 Cup Cilantro, 1 Mango
  • Set aside to serve over the cooked meat.
