Pineapple Salsa is one of my husband’s favorite summertime snacks. We aren’t huge chip eaters unless there’s salsa involved. We are pretty big fresh salsa fans, but the key word is FRESH. We honestly never buy jarred salsa. Wait, not true. We really like that mango salsa from Costco, but who doesn’t? Anyway,
We never used to make salsa. It was, in our minds, too much effort and it never turned out like we wanted it. That was such a mistake. We just needed to practice a few times, and in fact we needed to have one successful recipe to give ourselves a little self esteem boost. The more you play around in the kitchen the better you get.
I can’t help but share a crappy experience really quick, since I was so disappointed. We were at Corner Bakery last Monday, and it was possibly the worst experience I’ve had. We were a party of 7, but we all ordered separate. Two people got their food while the rest of us sat there, for OVER 15 minutes. If it had hit 20, and it was close, I would have left. The restaurant had a few people, but there was no line, and pretty much everyone was already eating. We finally received our food and the two waitresses just walked over and set everything down. They did not even attempt to hand out correct dishes, even the children’s food was put in front of adults. We had to hurry and swap around plates and then on my salad it was noticed that there were no oranges or strawberries. I kid you not, the waitress walked over, took a knife off the table and dug through my salad. She turned things over, mixed it to and fro and then said she would go get a bowl of the correct fruit. (I had ordered a spinach salad that comes with fruit, this was not something I had added and they had forgotten.) She never came back. Finally she walked by later and we reminded her. She went and got a bowl of grapes and strawberries. Ummmm wrong fruit, but I didn’t say anything. By this point I wasn’t interested in starting all over. I had, however asked for no goat cheese, but when I started to eat I noticed little crumbles as if it had been placed on the salad and then they remembered and hurried to remove it as best they could. Really?? Corner Bakery was so lovely when I lived in Chicago and I was thrilled to have it in Utah. Maybe not so much. Fail, Corner Bakery, Fail.
Pineapple Salsa
Recipe by me
2 1/2 Cups Pineapple, Chopped
3 Tablespoons Red Onion, Diced Fine
1 Tablespoon Cilantro, chopped
2 Tablespoons Green Pepper, diced
1/4 Cup Red Pepper, diced
1 Jalapeno, seeded and diced
1 Pinch of Sea Salt
1/2 Lime, juiced
Mix everything together, and enjoy!

Hi, got here through your Super Bowl round up post, found you on food gawker.
I had to say, I’ve had repeatedly bad experiences at corner bakery also. There was a time in my life that I lived in coffee shops/ cafes for 2 week furiously job hunting. Corner bakery and Panera bread were the two places I went most often because the power outlets were plentiful. Corner bakery consistently got my order wrong, charged me the wrong amount, was dirty, it seemed like there was always something off about the place. I definitely prefer panera now, their soups are delicious and coffee is usually fresh.
On another note, I love pineapple and will probably be taking this to a super bowl party on sunday! Do you think it would be ok to add some chopped roma tomatoes?

That's too bad about Corner Bakery. I've had good meals there. I have never had pineapple salsa. Looks like I've been missing out.
