Tarragon Chicken Salad

Is there anything better on a long hot day than ending it with a super easy, light, cool and delicious dinner? I love summer meals. I love that you tend to eat a little healthier and you use more fresh ingredients versus the winter when there isn’t a lot available fresh herb, fruit and even a lot of veggies. Speaking of veggies…

We are currently working on our garden and it is not going so well. Well, we are gardening with our good friends, and some of their stuff is looking great, but our herbs and peppers either aren’t growing or are looking limp. Yes, they are getting plenty of water, no the soil is not very good, and we are working on that, but any other tips for us? I really can’t wait to be eating fresh produce all summer long. I am feeling a bit antsy. Do you garden? If so, what are you planting this year?

Tarragon Chicken Salad

1 1/4 Cup Chicken, cooked and shredded (or 1 can of Chicken)
1/3 Cup Light Mayo
1 Teaspoon Fresh Tarragon, chopped
1 1/4 Teaspoon Dijon Mustard
Salt and Pepper to taste
3 Slices Bacon, cooked and chopped
1 Avocado, chopped
2 Leaves Romaine Lettuce
1 Tomato, Chopped

In a small bowl, combine the mayonnaise, fresh tarragon, dijon mustard, and salt and pepper. Add the chicken and carefully fold together. Add the remaining ingredients, folding everything in to evenly distribute all ingredients. Serve on good wheat bread or pita.
