The southern cheese cookies/crackers/or biscuits, whichever you choose to call them are much more than just a delicious snack. These also come along with a fun memory and a new tradition at our house. My mother-in-law taught me how to make these after her sweet friend taught her how to make them. I love pass along recipes. A little story about the person or recipe can make anything better, and I cannot wait to one day meet Miss Mary because she sounds like an absolute doll.
My Mother-in-Law is a true southern lady. She totally has the accent and says loads of crazy words like,
buggy instead of shopping cart, pocketbook instead of purse,
This is what Miss Nancy, my MIL says about the cheese biscuits, “This recipe was given to Mary Greene of Columbia and Beaufort, South Carolina by her Aunt Mimi. Miss Mimi made these as treats for her friends and family, who all looked forward to enjoying them at every get together. Since her passing Miss Mary follows her sweet Aunt’s tradition.”
I seriously do love traditions, and I can totally hear the southern drawl of her voice as she tells me about the southern foods.
So, if you’re on board with the ol’ Southern Thanksgiving, (gosh, even if you aren’t you should probably make these) make these crisp, little nuggets of goodness to munch on while you’re waiting for that glorious turkey to cook.
Miss Mimi’s Famous Cheese Biscuits
2 Sticks (1 Cup) Land O’ Lakes Margarine, room temperature
2 Cups Kraft Extra Sharp Cheddar Cheese, grated, room temperature
2 Cups All Purpose Flour
1/8 Teaspoon Red Pepper Flakes
2 Cups Rice Krispies
Preheat the oven to 350 degrees.
Let Cheese and margarine come to room temperature. Place the grated cheese in a food processor and cream until it forms a ball. You can cream by hand, but it’s going to take longer.
In a standing mixer add the margarine and turn on the mixer. Cream the margarine until smooth and then add the cheese by breaking off bit by bit until you have used all of the cheese. The mixture should now be smooth and resemble frosting.
Sift the flour into the mixing bowl. Using a fine mesh strainer, add the Rice Krispies cereal and shake to remove any small pieces of the cereal. Add the cereal to the mixing bowl, and stir to combine.
Drop by rounded teaspoons onto ungreased baking sheets, or use a pastry bag to pipe little quarter sized dollops.
Bake at 350 degrees for 20 minutes. Here in Utah it only took 12-15 minutes. Spread out on paper towel to absorb any excess grease and enjoy!
