Thanksgiving is approaching faster than ever this year. Am I right? The school year is already blowing by, but I swear that Halloween came faster than ever and we all know that after Halloween the real whirlwind begins. I am bound and determined to live up this holiday season and I’m choosing to start with cornbread. I don’t really think cornbread is necessarily the “coolest” thing out there, however it is constantly forgotten about compared to rolls, glorious rolls. I can’t help it, I’m all about our potato rolls, they are my absolute favorite. But, I will say that a tender, warm, piece of cornbread slathered in creamy butter and sticky honey is something that when presented I cannot turn down, or stop eating. A Southern Thanksgiving

Welcome to a Southern Thanksgiving where I’ll be sharing loads of delicious recipes to make your Thanksgiving extra spectacular this year. I love Thanksgiving and the opportunity to really think about what we are thankful for. One thing that I am feeling incredibly thankful for this year, my children.

We were able to take the girls to the most gorgeous park a few weeks ago and Tiffany from, Harston Designs was kind enough to snap some gorgeous photos of the girls for us. I cannot wait to get everything printed off and hung on our walls. Woohoo!! I STRESS about family photos because outfits are hard to figure out, weather never cooperates and I swear that many photographers don’t work well with children. Tiffany was incredible and I am forever grateful. Not only was she quick, but she was kind and silly with the girls which totally put them at ease and we got some great shots. So if you live around the Utah area… just sayin’ you may want to check her out. And the best part? She pulls out great shots for a reasonable amount. Finally, a Utah photographer that isn’t charging an arm and a leg!!!! Alright, without further ado, the cornbread that is like a darling southern belle, all perfect, sweet, and wonderful.

Southern Belle Cornbread

(recipe is adapted from my sister’s old friend… I think)
1 1/2 Cup Bisquick
1/2 Cup Cornmeal
1/3 Cup Granulated Sugar
2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1 Egg, slightly beaten
1/2 Cup Melted Butter, unsalted
1/3 Cup Honey
3/4 Cup Milk
1/2 Teaspoon Vanilla
Heat the oven to 400 degrees.
In a mixing bowl combine the bisquick, cornmeal, sugar, baking powder and salt. Whisk to thoroughly combine.
In a separate bowl, combine the egg, butter, honey, milk and vanilla. Stir until smooth. Add the dry ingredients and stir until completely combined. Pour into a greased 8×8″ baking dish. Bake for 20-25 minutes and let cool before cutting.
