Meat is a major part of our lives in my family, but we love vegetarian options as well. Just because you are not vegan or vegetarian doesn’t mean that you can’t have vegetarian meals. In fact, with all of the different vegetables and flavors in these vegetarian tacos you really have no need for meat at all. Old El Paso asked a few bloggers to come up with a fun recipe using their seasoning and I already had this recipe in mind so it was a perfect fit. Growing up we always had meat for dinner. Pretty much every single night. I didn’t think anything of it then, but now that I’m older I realize that I need that break from meat every now and again. Plus, most people don’t get anywhere near the amount of vegetables that they should, so vegetarian dishes one or more times a week is the perfect way to at least try to incorporate more vitamins and minerals into your diet through good foods.

Now that we’ve been mixing things up with vegetarian options for a few years I’ve found that meat every single day actually weighs me down and I don’t feel as healthy. Don’t get me wrong, again I love meat, but our bodies crave balance and meat every single night does not provide that. In fact eating it sparingly and in proper proportions is healthier for you so that your body can get a wide variety of nutrients. Vegetables on the other hand, well you can just go to town with those. Eat as many fruits and veggies a day as you can and you’ll find yourself fighting off more colds, illnesses and feeling better in your overall health.

And of course I have to mention the kiddos. Yes, vegetarian options can be trickier with some kids, but you need not fear. We’ve found that if we continue to offer the same foods again and again that our children will eventually try it. In fact

What Is Crema?
Crema is a Mexican dairy product prepared with heavy cream and buttermilk.
Salt and lime juice may also be used in its preparation.
What Could You Substitute for Crema?
Plain yogurt offers a tangy flavor similar to crema.
However, yogurt cannot be used at high temperatures like creme can, because it may separate.
Are Corn Tortillas Gluten Free?
Corn tortillas today are made from masa harina, a special type of corn flour.
Masa harina is naturally gluten free, however, cross contamination could occur if the tortillas are manufactured in a facility that manufactures gluten products.
Vegetarian Tacos with Spicy Crema
Vegetarian Tacos with Spicy Crema

Ingredients
- Olive Oil
- 1 Tablespoon Old El Paso Taco Seasoning
- 3 Bell Peppers, red, green, and yellow – 1 of each
- 1/2 Onion, sliced
- 1 Pint Baby Bellas Mushrooms
- 1 Small Zucchini, chopped
- 1 Small Yellow Squash, chopped
- Salt and Pepper
- Old El Paso Hard Taco Shells
- Queso Fresco
- Cilantro
- Lime, chopped
- 1 Romaine Lettuce Leaf, chopped into fine strips
For the Sauce
- 1/2 Cup Crema , or sour cream
- 1/2 teaspoon Chili Powder
- 1/2 teaspoon Cumin
- Queso Fresco , and cilantro for garnish
Instructions
- Heat a skillet over medium heat and add a drizzle of olive oil.Olive Oil
- Add the taco seasoning, peppers, onions, mushrooms, zucchini and squash and cook for 8-10 minutes or until tender..1 Tablespoon Old El Paso Taco Seasoning, 3 Bell Peppers, 1/2 Onion, 1 Pint Baby Bellas Mushrooms, 1 Small Zucchini, 1 Small Yellow Squash, Salt and Pepper
- Meanwhile, in a small bowl mix together the crema and seasonings.1/2 Cup Crema, 1/2 teaspoon Chili Powder, 1/2 teaspoon Cumin, Queso Fresco
- Place the veggies in each taco shell, top with a sprinkling of cheese, cilantro, a squirt of lime, and drizzle with crema.Old El Paso Hard Taco Shells, Queso Fresco, Cilantro, Lime
- Add the lettuce strips and serve immediately1 Romaine Lettuce Leaf

Once all the vegetables are chopped, this meal comes together fast. It is fresh and tasty. I love that it can be adapted to personal taste as well by changing up the vegetables, doubling the crema (hint, hint), leaving out the taco seasoning (I forgot but it was still good possibly because I added three large garlic cloves crushed at the end of sautéing). Great recipe to place into rotation!

The picture shows crumbly cheese but recipe says sour cream. .? I was hoping for crumbly vegan cheese recipe….
Hi Jill, the sour cream is for the crema sauce, but I’m sure you could use a vegan cream and it would be great. The crumbly cheese is queso fresco and can be skipped if needed.
