I seriously think that I’d rather skip Thanksgiving and just go straight to the leftovers. I love the turkey sandwiches on homemade rolls, leftover pie and this day after Thanksgiving salad. I mean there’s all sorts of deliciousness to be made with all of that good food sitting around. Like these mashed potato cakes with cranberry chutney. Oh my goodness they are like heaven!! I was getting ready for Thanksgiving this year and ended up with a few stragglers, raspberries from the Raspberry Jello Salad, Pomegranate seeds, turkey breast from our herb roasted turkey breast, tomatoes from the easy garden salad with garlic dill dressing, brown sugar almonds from the lemon berry salad and a little Dubliner Cheese from Kerry Gold that we use with snacks before dinner. Plus there was the orange juice from the orange rolls, and all of the seasonings so I decided to throw it all together and see what happens. Oh my goodness. It’s like sweet, salty, crunchy, and spiced creamy goodness. It’s seriously like a second Thanksgiving or even the holidays in one perfect bite. You get a spiced flavor from the creamy orange dressing that seriously tastes like Christmas. It’s wonderful and a great way to use leftovers so I hope you’ll try it.

Day After Thanksgiving Salad

Yield: 6 servings

Serving Size: 1 1/2-2 Cups Per person

Day After Thanksgiving Salad

An easy and healthier way to eat those Thanksgiving leftovers!

Ingredients

  • Spinach or Lettuce, 1 head
  • 2 Slices of turkey, chopped
  • 1/2 Cup Raspberries
  • 1/2 Cup Cherry Tomatoes, halved
  • 2 Slices Dubliner Cheese, chopped
  • 1/3 cup pomegranates
  • 1/3 cup brown sugar almonds
  • For the Dressing
  • 3 Tablespoons Mayo
  • 1/4 Cup Orange Juice
  • pinch of salt
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1/8 teaspoon nutmeg
  • 1 teaspoon sugar

Instructions

  1. Toss all of the ingredients for the salad together.
  2. In a small bowl, whisk together the salad dressing and serve with the salad. Enjoy!
