Today’s post was actually going to be a really yummy teriyaki chicken casserole, and then Friday happened. It was a long day. Actually it flew by too quickly, but I mean it was one of “those” days. And so I decided that if it was going to be a craptastic day I might as well knock out some cookies for an upcoming Valentines Day post. Then these Red Velvet Marshmallow Dream Cookies happened and dudes, they have a secret ingredient. Who needs chocolate marshmallow cookies, or cookies n cream brownies (actually, I still love both so don’t get rid of them) when you can have these?

Deborah from Taste and Tell and one of my very dear friends is the queen of red velvet. In fact she has more red velvet recipes than anyone. A few of our favorites are, Red Velvet Cheese Ball,Red Velvet Donuts, Red Velvet Cream Cheese Muffins, and Red Velvet Gooey Butter Cookies. Seriously, she’s the queen and totally inspired me to try a new red velvet recipe.

Good golly they are good. Like, really good. They are like a dream. A heavenly dream that when someone wakes you up you quickly try to get back to sleep so you can get back to that dream. Quite unlike the dream I had a couple of weeks ago. I dreamed that we knew the end was coming. Cade and I grabbed the girls and tried to go warn a friend but they were convinced that nothing was going to happen and they were just fine doing things their way. We tried to make sure they had a place to go but again they insisted that we were wrong and they weren’t at all worried.

Disappointed, but still in a hurry to get to safety we left. By now huge black clouds and smoke were coming up over the mountains. The sky was darkening and the world seemed to be divided, some were hurrying to safety while others were going about their business or mocking others for their worry.

We made it home and realized that we don’t have a basement so the safest place we could think of was a closet under the stairs. We all huddled in and by now the fires had started. Cade shut the door and we held on to each other and then the world went dark. We were safe, but we could feel that others were not. We knew that there was suffering but we couldn’t leave or we would be gone too. Instead we held onto our girls and just prayed.

The end. How’s that for dramatic?! I woke up feeling a little disoriented and totally weirded out. And then you’ll never guess what happened! Hours later C went down for her nap and when she got up she was crying. I asked what was wrong and she said, “I dweemed there were fires and smoke coming over the mountains”. Cue the creepy theme music.

And on that happy note, haha, I leave you with the worlds best stinking Valentines cookie there is. And who knows, maybe they could even save the world with all the love and goodness that’s wrapped up in them. Oh gosh, and I almost forgot a recap!! Red velvet cookies, marshmallow and the secret ingredient is a greek yogurt cream cheese (yes, it’s a real thing! Check out the cream cheese at your store and look for the one with greek yogurt)! You’d never guess the secret but it makes the yum yummiest frosting! Ok, now tell me your craziest dream!

Red Velvet Marshmallow Dream Cookies

Prep Time: 5 minutes

Cook Time: 8 minutes

Yield: 20 to 24 cookies

Serving Size: 1 cookie

Red Velvet Marshmallow Dream Cookies

Soft red velvet cookies with marshmallows and a cream cheese frosting with a secret.

Ingredients

  • 1 Box Red Velvet Cake Mix
  • 1/3 Cup Melted Unsalted Butter, cooled slightly
  • 2 Large Eggs
  • 24 Marshmallows
  • For the Frosting
  • 8oz Greek Yogurt Cream Cheese* see note
  • 1 pinch of salt
  • 1 Teaspoon Vanilla
  • 3 1/2 Cups Powdered Sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, combine the cake mix, butter and eggs until smooth. Scoop into rounded balls on the cookie sheet. Bake for 6 minutes.
  3. Meanwhile, slice the marshmallows in half. Remove the cookies from the oven and gently add both halves of the marshmallow to the top of the cookie and return to the oven for 2 minutes.
  4. Remove to cool slightly before frosting.
  5. For the frosting
  6. In a large bowl, mix the frosting ingredients until smooth. Using a knife, carefully frost each cookie. Serve immediately or store in an airtight container for up to 3 days.

Notes

If your store does not carry the greek yogurt cream cheese you can use regular or neufchatel
