I don’t normally post on Sundays, but I am writing this on a Tuesday ¬†and while the whole week is already set with giveaways we loved this recipe so much I just had to sit down and write about it. So, the only day that’s available to post is Sunday and I’ll be scheduling this baby out so that your Sunday dinners can be amazing. In fact, I’m going to bet there will be silence due to everyone sitting around licking their bowls clean. Danged creamed corn, my goodness it’s good!!!

And in case you don’t think creamed corn is all that amazing, well just wait until you try my version. It’s like a corn chowder version of creamed corn. Buttery, creamy, and all around awesome. Plus, for years I’ve been hearing Cade talk about his all time favorite sandwich that involves corn chowder or creamed corn and ham, so make sure you save a little Easter ham and join us on Tuesday because I finally recreated it and dudes, all these years he’s been right!!!! It’s delicious! It’s so simple! I thought for sure it sounded totally lame, or at most, eh pretty good. But holy yum! Oh gosh, I am giving away too much, just come back on Tuesday! Oh, and tomorrow there might just be a surprise for one lucky reader. ;)

And because today is Easter, one of my favorite holidays, I thought I would share a little thought. You may have read my post about being Mormon, but either way I wanted to share my thoughts for today. I love Easter. Many religions talk a lot about Christ being on the cross, but to us it’s why he was on the cross and more importantly what happened after that means so much to us. I love the above video and urge you to watch it. ¬†Christ did live, he walked this Earth and came for a real purpose. I know that we lived before coming here to Earth. That this was all part of a plan, to see who we would be when we were no longer living with our Father in Heaven and to live a life worthy of being in His presence again. Christ’s purpose was to come to Earth, live a perfect life and then be a sacrifice for each and every one of us, because he loves us. I know that he rose from the grave, a resurrected man, one who broke the bands of death, opening the gate for each of us to return to our loving Heavenly parents who one day we will remember just how well we know and love our Father, Mother and Jesus Christ. I know that we are all here for a purpose and that because of that beautiful Easter morning we will one day live and rejoice for what the Savior has done for us.

The BEST Creamed Corn

Prep Time: 1 minute

Cook Time: 10 minutes

Yield: 4 servings

Serving Size: 1 scoop

The BEST Creamed Corn

The creamiest, most delicious creamed corn I have ever had!

Ingredients

  • 4 cups frozen corn
  • 3 tablespoons of butter, divided
  • 1 tablespoon of flour
  • 1 oz cream cheese
  • 1 1/2 cups heavy cream
  • 1 teaspoon salt (or to taste)
  • 2 teaspoons sugar
  • 1/2- 3/4 cup colby jack cheese
  • 3 pieces of bacon, cooked and crumbled
  • pepper to taste

Instructions

  1. In a medium saucepan over medium heat, add the butter and melt. Whisk in the flour for 20 seconds and while still whisking add the cream cheese and stir until it all clumps together. Continue to whisk and add the heavy cream. Add the sugar, salt, and cheese. Whisk until smooth and add the corn. Turn down to low and allow to cook until the corn is hot. Season to taste and serve with crumbled bacon on top!
