This is one of those fun posts where we get to stuff in a few different recipe ideas but they are all so easy it’s not overwhelming at all. We are sharing avocado toast 6 ways because my birthday was in April and as you saw on instagram Cade made me an entire board of avocado toasts that I could share with everyone for a birthday lunch. So. Fun.

In case you’ve been living in a small cave, avocado toast is all the rage right now. You may think it seems a little too simple or boring but I’m telling you, it will be your new favorite thing for meals or snacks. eureka!® Organic Bread encourages us: Don’t be Bland! And I agree. Eating better doesn’t have to be boring and you don’t have to sacrifice taste in order to eat better, I promise. The only rule you need to live by, no wait, there’s two…

  1. Good quality bread. This is an absolute must. In fact the more whole grain and seedy the better. Even those who can’t stand a seedy bread will be completely converted thanks to avocado toast. It gives amazing texture and flavor which is really needed since the main ingredient is a creamy avocado. We personally have been using eureka!® because it is an organic bread that is bursting with rich flavor, fantastic texture and it isn’t full of high fructose corn syrup, artificial flavors, colors or preservatives.

2. Acid or Salt. That’s it, period. You have to do a little acid like vinegar, lemon or lime juice or salt either kosher or sea salt or something salty like bacon or feta. It really works so well together.

We have 6 different ways to make it for breakfast, lunch and dinner. First up is one of my favorites, honey berry avocado toast.

Breakfast berry avocado toast with a drizzle of honey ohsweetbasil.com

It’s got a dollop of cottage cheese and a drizzle of honey which makes it an equally beautiful, light and delicious way to start your morning.

Or if you’re more savory, try a bacon and egg avocado toast and make sure that egg is over easy because the yolk ends up like a silky sauce over everything.

This is Cade’s pick for breakfast.

Lunch, oh how I hate lunch. No, I love lunch, but I hate that it’s a harder meal to figure out what to make and in the middle of the day it’s hard to have the time to make something delicious which is why I often end up eating a bowl or oatmeal or salad. Lately avocado toast has been my go to and Cade and I are tied on this one.

There’s the Greek salad version with that briney feta and olive mixture, cool cucumbers and a touch of olive oil, salt and pepper. You could also add a little red onion too.

Caprese Avocado Toast ohsweetbasil.com

Or go with our all time favorite flavor combo that inspired us to start this site, caprese with balsamic drizzle. Just let the balsamic vinegar simmer on the stove until it coats the back of the spoon then drizzle it all over those delicious little mozzarella pearls, grape tomatoes and fresh basil.

It. Is. Amazing.
Fajita Avocado Toast ohsweetbasil.com

And dinner. When Saturday hits we just want to enjoy our weekend and dinner always ends up being so casual (hello breakfast for dinner) and obviously avocado toast has made its way into our rotation for quick Saturday night dinner. Cade loves the fajita version, some roasted or sauteed peppers, a little cheese, sometimes even a little chicken and a squeeze of lime.

Turkey Bacon Avocado Toast ohsweetbasil.com

I tend to go more turkey bacon avocado because I’m a nursing mom and am always hungry so protein makes its way into most of my meals. Which is a good thing, protein is so essential for a healthy lifestyle. I love to just roll up little pieces of turkey and sprinkle on some chopped bacon. It’s filling, it’s creamy, salty and healthy all at once.

If you’re nervous just start with the bread, avocado, a squeeze of lemon and a pinch of salt and pepper. It’s amazing. Cade and I would love to see your eureka!
