One of the best potato salad recipes we’ve ever had and the best part? Everything can be prepped a day ahead, even the dressing. With busy summer schedules, sometimes the only way I can make it from one event to the next is by being able to prepare some of our dishes ahead of time. It really helps to lessen the stress of busy days and not to mention sometimes allowing a dish to sit overnight or longer really helps the flavors to meld together and makes everything much more satisfying.

I like it when potato salads have a twist and aren’t just plain mayo and mustard. Yay… more of the ordinary …. but not with this baked potato salad! It’s loaded with bacon, cheese, and creamy sour cream that makes it just perfect for summer. And who doesn’t want a bomb diggity baked potato salad for summer BBQs? I can never resist digging in. Seriously, I never pass the stuff up. Enjoy!

Loaded Baked Potato Salad

Cheesy, bacon potato salad. Enough said.
Ingredients
  • 8-10 Red potatoes
  • ⅔ Cup Sour Cream
  • ⅓ Cup Mayonaiise
  • 1 Tablespoon melted butter, cooled
  • 2 Stalks (or more) green onions, chopped, plus more for garnish
  • ½ Lb Bacon, plus more for garnish
  • 2 Cups Shredded Cheddar Cheese
  • Salt and pepper to taste
Instructions
  1. Peel your potatoes, rinse clean and chop into 1" pieces. Fill a pot with water and heat to medium high heat. Boil the potatoes until tender, drain and allow to cool completely.
  2. Cook the bacon on a baking sheet at 400 for 15-20 min depending on thickness of bacon. Chop into pieces.
  3. In a small bowl, whisk together the sour cream, mayo, and butter.
  4. In a large bowl, fold together the dressing, potatoes, green onions, bacon, and cheese. Season with salt and pepper to taste* see note
Notes
Sometimes we like to leave the peels on our potatoes for extra vitamins and flavor.

Potatoes need quite a bit of salt so season, taste and repeat until flavored correctly.
