That baby boy is the cutest little thing. I have been following Oh Sweet Basil for a while and I was able to meet Carrian in person a few months back. She is literally one of the sweetest people you will ever meet. She is so genuine and kind.
Anyways, I have a really really good recipe to share with all of you today.

Have you ever had cookie butter? It is some tasty goodness. I know a lot of people that are crazy about this stuff and will eat it by the spoonful, straight out of the jar. It has the thick and creamy consistency of peanut butter and the flavor of gingerbread and Teddy Grahams, which makes it perfect for a holiday treat.
Biscoff Cookie Butter is pretty easy to find at your local grocery store. I used Trader Joe’s Cookie Butter for this recipe, but either will work. I think cookie butter is a flavor that grows on you. It’s pretty unique at first, but the more I eat it, the more I really like it, especially in these cookie bars.
I love these bars, they are rich and chewy and such an indulgence. The cookie butter flavor shines through and it adds such a comforting flavor and the white chocolate chips are the perfect finishing touch. These bars are even great with half cookie butter and half peanut butter! They are super easy to make and the hardest part is waiting for them to cool before cutting.

Can Cookie Bars Be Frozen?
Cookie bars can be frozen.
They should be cooled first, and they freeze better in not cut.
Wrap tightly in plastic and then foil and freeze for up to 3 months.
Is White Chocolate Really Chocolate?
White chocolate consists of cocoa butter, milk solids and sugar.
Technically, white chocolate is not chocolate since white chocolate does not contain cocoa solids.
But, it does contain cocoa butter, although that is only about 20% of the make-up, so, it is called white chocolate.
What Can You Substitute for Brown Sugar?
You can use white sugar in equal amounts, but your cookies will be a little crisper.
You can also add 2 tablespoons molasses to every cup of white sugar and you will not be able to tell the difference!

What is cookie butter?
Hi Susan! It is God’s gift to mankind…haha…jk! Good question…it is a paste form of speculoos cookies or Biscoff cookies, if you’ve ever had those. It’s the consistency of peanut butter or Nutella but is basically ground up cookies made into a butter consistency. You should be able to find it at any grocery store. I find it in lots of different places — sometimes by the peanut butter, sometimes by the cookies, sometimes in the bakery area. The most common brand that I see here is called Lotus Biscoff Cookie Butter. You can grab it off Amazon too of. I hope this helps!
These are SO delicious! I made them last night and took them tonight to a get together with friends, the ALL loved and raved about them. The best part was how EASY they were to make and how few ingredients they need. I happened to have cookie butter on hand – so I didn’t even need to go to the store for anything. My favorite part were the edges.. the extra crispy crust was divine!
