Eve Mattress is every blogger’s favorite mattress because gosh darnit, we are tired, worn out parents and all we want is a good night of sleep. Use basil100 for $100 off!

5. Slippers

If you know me at all you know that I live in slippers. My feet are always cold and I don’t love bare feet so I’ve spent a lot of time finding the best slipper and these Minnetonka slippers are it. Good support, light weight and ohhhhh so snuggly. Annnnd they are on sale at Blue Fly! I had to search to find them on sale considering that this is kind of a big time of year for slippers.

9.The BEST Blanket

If you only buy one thing off this list, make it this blanket. Much like slippers, I love a really fantastic blanket. And I mean, the type of blanket you can obsess about. You may never leave the house again. You may be the weirdo at the movies with your own blanket, but it will be worth it. Buy a Saranoni for you and each of the kids and thank me later. I. Am. In. Love.

10. The Only Pillows You’ll Ever Need

We took the plunge about 6 years ago and finally invested in good pillows and we only just replaced them THIS. YEAR. That’s how long they lasted! The Talalay Latex by Malouf keeps you cool, supports your head, neck and shoulders and it’s not hard like memory foam. It totally forms to you but allows you to move. We use the plush or firm and both are great. A side sleeper like me and back sleeper/side sleeper like Cade would be happy with either. A tummy sleeper will want plush.

I found this awesome Ghirardelli peppermint bark in full size candy bars versus those little individually wrapped candies and I just had to make a super quick and easy Peppermint Bark Brownies recipe. 2 Ingredients, that’s all you need.

I’m totally that girl at the party. Especially baby showers or Relief Society meetings. Everyone is sitting there making small talk and I’ve got my eye on the food table. People are really enjoying each others’ company and then someone says, “well there’s food over there so help yourselves”.

YES!!! Those are the words I’ve been waiting for! My heart is palpitating I’m so darn excited to try everything!! And then the dreaded moment. It happens every time.

No one moves. People literally turn right back into their conversations. WHAT?! You guys, there is food over there!! WHAT ARE YOU DOING?!

And like always, I stand up and head on over to the table. The first one. Every. Single. Time. And I know what it’s like to be the one that made all of that food. It’s a ton of work and you just want everyone to enjoy it.

That’s where these brownies come in. If you’re cooking for someone or a big ol’ crowd you need something delicious but stress free. And if not and it’s just you that will eat it, well you still need it stress free and quick so you can dig in right away without worrying that you’re the only one who’s there for the food.

Ghirardelli’s peppermint bark is such a holiday classic and I happen to love all things Ghirardelli. I am pretty sure I dream of visiting Ghirardelli just as much as I dream of Italy or Greece. No, really. So when I saw those full size bars in the grocery store I had to break out our box of double chocolate brownies and stuff them with the bark. It’s fudgey perfection with a hint of melty, pepperminty, chocolate goodness oozing out the middle. 2 ingredients, that’s all it takes and during the holidays, you don’t need more work on your shoulders.

Have you ever wondered how to make chocolate pie at home? Let’s learn how to make an easy no bake chocolate pie with chocolate Jell-o pudding to thicken.

We hear ya, everyone wants to know how to make a pie, why their pie filling isn’t setting up, why their chocolate pie filling is liquid, how to make a chocolate pie with pudding but not have it taste like straight pudding and of course, how to store a chocolate pie. The questions go on from there and as they come in hopefully we can update the post fast enough to help anyone with questions.

Let’s start at the very beginning because according to Julie Andrews in The Sound of Music, it’s “A very good place to start”.

You can make chocolate pie at home totally from scratch, and we will tackle that recipe soon enough, but today we are going to start out simple for all of our friend’s who want to make their first chocolate pie or who just want a quick and easy no bake chocolate pie recipe. To do that we are going to use an instant Jell-O pudding. You can also make an entirely no bake pie by using a graham cracker, chocolate graham crackers or heck, even vanilla wafers would make a great crust!

Pie Crust and How to Store Pie Crust

In this recipe I chose to use Mom’s magic pie crust because it turns out flaky every time and it isn’t hard to work with so it’s great for beginner pie crust makers. It happens to make two crusts so to store the leftover pie dough, wrapped tightly in plastic wrap and inside of a ziloc bag in the freezer. When you take it out of the freezer, just let it rest in the fridge to become workable.

To make a chocolate pie with pudding you’re going to want to use the pudding flavor you like the most but what’s most important is to introduce other components that will help the filling taste like a chocolate cream pie versus a crust full of pudding. We love to use sweetened condensed milk and cream cheese as it thickens the chocolate filling for the pie so you don’t have to worry about something not setting up right in the fridge (How many of you have said, why isn’t my filling setting up?!!) or turning to liquid.

We also use a stabilized whipped cream using unflavored gelatin, I’ll include the recipe with the pie. I like it because I can decorate the pie a whole day ahead and it stays beautiful unlike fresh whipped cream which will fall and separate. Also, stabilized whipped cream uses unflavored gelatin so you can pipe it all pretty like. 🙂

If you’ve been searching for how to make stabilized whipped cream using gelatin you’ll find a lot of different recipes out there and unfortunately a lot of the stabilized whipped creams are lumpy, gross or don’t stiffen up. Many reasons for this, but the biggest is that the user let the gelatin sit for too long or let it warm up in the microwave for too long. Follow exactly the directions and make sure you very slowly drizzle it in when it’s time.

This chocolate cream pie really is such a cinch to make and it’s a beautiful pie that guests will never guess you took shortcuts with. We hope you love it!

Easy, no bake, creamy chocolate pie and everything you need to know so it turns out perfect.
Ingredients
  • 1 Pie Crust, blind baked (see note)
  • 2 3.4 ounce packages chocolate fudge pudding (instant)
  • 2 Cups Whole Milk
  • 8 ounces Cream Cheese, softened
  • 14 ounce can Sweetened Condensed Milk
  • 4½ Cups Cool Whip or Fresh Whipped Cream
  • 1 Chocolate Bar for garnish
For the stabilized whipped cream
  • 1 Teaspoon unflavored gelatin (found by the jell-o)
  • 4 Teaspoons cold water
  • 1 Cup heavy cream
  • ¾ Cup Powdered Sugar (less if you prefer it less sweet)
  • ¼ teaspoon vanilla extract
Instructions
For the crust
  1. Prepare the crust as directed. Place one disc in plastic wrap and in a freezer bag and store in the freezer for another time. Roll out the second dough in the pie plate, crimp the edges and dock, or in other words, poke with a fork all over the inside and bake for 15-20 minutes. Allow to cool while you prepare the filling. The crust must be cool to fill.
  2. In a medium bowl, whisk together the pudding and milk. Set aside to thicken.
  3. In a large bowl, beat the cream cheese until smooth. Scrape down the sides of the bowl and add the sweetened condensed milk. Beat until smooth and scrape down the sides of the bowl again.
  4. Stir the pudding into the cream cheese mixture and fold in half of the whipped cream and then the remaining whipped cream. fill the pie crust. Place in the fridge to chill for 1 hour before serving. Pipe the whipped cream and using a peeler, shave chocolate all over the top.
For the whipped cream
  1. Place cold water in small bowl and sprinkle the gelatin over it. Let the gelatin sit for 5 minutes without stirring. Once the gelatin is set, place bowl in microwave and heat until gelatin turns to liquid, about 10 seconds.
  2. Meanwhile, quickly place heavy cream in the bowl of a stand mixer with the whisk attachment or in a mixing bowl and use a handheld mixer. Beat the cream until it starts to thicken, about 1 minute and then with the mixer on high, very slowly in a small steady stream, drizzle in the gelatin.
  3. Continue beating the cream until stiff peaks form. Pipe the whipped cream around the edges.
Notes
We prefer to make a homemade crust and dock it, or poke it with a fork all over inside, add parchment and pie weights and bake, but purely docking the crust will work too.

I don’t know about you, but I adore appetizers, especially around the holidays. We make these 20 minute cheesy pesto tarts all the time!

This is a sponsored post on behalf of Fisher Nuts, however all opinions remain our own.

It’s easy to make a savory appetizer with puff pastry for gatherings and using a few key ingredients will make it taste like you’ve been slaving for hours. Which is my favorite thing, make people think I’ve worked harder than I did.

We’ve done a whole post on pesto, how to make pesto, how to store pesto, how to freeze pesto, how to keep pesto green, how long pesto keeps, and we have plenty of recipes that use pesto which we will link up to at the bottom of the post. So, refer back to THIS post if you need to read up on Pesto.

Just as with our classic pesto, the secret to really great flavor is in toasting the nuts and garlic. Walnuts, when fresh are not bitter like you may believe. Instead they have a sweetness to them and with that robust garlic it really makes for a great pesto.

The pesto we will make today is a little different as it uses Fisher Nuts Walnuts. We did a random sampling and Fisher Nuts were preservative free, tasted the most fresh and not bitter since they weren’t past their date of freshness.

Did you know that? That good fresh walnuts taste juicy, nutty and sweet? To store walnuts, I keep mine in the blue bag we buy them in as the dark colored bag actually is best to keep them fresh, then we place them in the kitchen cupboard as light degrades the oils.

Alright, so we use walnuts instead of pine nuts to really push that more nutty flavor in this pesto and we use store bought puff pastry because hello, who has time to make that from scratch?

Blend up your pesto in a blender or food processor and then stir in a little, or a lot of good quality parmesan or pecorino romano cheese. That’s the secret to simple food, use a few good ingredients and the flavor will take care of itself.

Just cut the pastry dough into circles and press into a mini muffin pan. Use a fork to poke holes all over the inside of the puff pastry and bake it until golden. Ours took about 10 minutes, but our oven has been crazy lately so 10-15 minutes should be perfect for you.

Pull them out and stuff with pesto and mozzarella cheese. We love to throw in halved or whole, depending on size grape tomatoes and then bake them off for a few extra minutes to melt the cheese.

The best part is, you can serve these hot or room temperature and they will still taste awesome!

It only takes 20 minutes to throw together the yummiest little appetizer for your party full of bright pesto and gooey cheese.
Ingredients
  • 3 Cups Basil packed
  • 3 Cloves Garlic
  • ¼ Cup Fisher Walnuts
  • ¼ Cup plus 1 Tablespoon Olive oil Extra Virgin
  • ¼ Cup plus 1 Tablespoon Parmesan Cheese
  • ½ Teaspoon Lemon Zest
  • ½ Teaspoon Lemon Juice
  • Salt to taste
Tarts
  • 2 Sheets Puff Pastry
  • 1 Cup Grape Tomatoes Halved
  • 1 Cup Mozzarella Cheese Shredded
  • 1 Pinch Black Pepper Fresh Cracked
Instructions
For the Pesto
  1. Heat a skillet over medium heat and add the walnuts and garlic. Toast for a few minutes or until golden brown, shaking the pan occasionally to toss the nuts and promote even color. Once the nuts are done, remove them from the pan and continue to toast the garlic. Remove it from the pan and remove the skin. Wait until both are cooled.
  2. Place the basil, nuts, garlic, and olive oil in a blender and pulse until smooth, but still a tad grainy in texture. Place everything in a bowl and stir in the cheese. Salt to taste and set aside.
For the Tarts
  1. Preheat the oven to 400 degrees.
  2. Sprinkle a little flour on the counter and roll out the puff pastry sheets. Using a biscuit cutter or large glass, cut the dough into circles. Using a fork, poke holes all over the dough and gently press into a mini muffin tin. Place in the oven for about 10 minutes, remove from the oven and using a small spoon or tart press, push the sides back out, making a well in each center. I often use my fingers and burn myself, but do it anyway. 🙂
  3. Fill each cup with 1 teaspoon or so of prepared pesto. Add a tomato to each cup, a sprinkle of cheese and place in the oven for 5 minutes or until golden and cheesy.
  4. Remove from the oven and add a pinch of black pepper. Serve immediately or at room temperature.
Notes
These tarts can be assembled hours before, stored in the fridge covered with plastic wrap until you're ready to bake and serve.

Waffle Love waffles are a huge hit in #Utah and now you can make your own #wafflelove #leige waffles from home! ohsweetbasil.com-2

This Copycat Waffle Love Liege Waffle Recipe is the closest we’ve found to our favorite food truck waffles here in Utah using a Liege waffle.

Food trucks are a really big deal right now, and Utah is definitely trying to get in on all of that. One food truck that is especially popular right now is called, Waffle Luv. They have become quite famous for their liege waffles and while we still love bacon apple cider waffles, this copycat waffle love recipe is seriously fantastic and it would be the perfect way to enjoy Christmas morning. We love making copycat recipes. This one for the Arby’s Beef N Cheddar Sandwich is even featured over at All Free Copycat Recipes, a great resource for copycat recipes.

Waffle love has quickly become the go to family treat truck, date night truck, girls night out truck, and “I’ve got a hankering for something sweet” truck. The waffles are amazing and the little sugary bits really add something to the waffles, but you can’t forget about their awesome toppings which revolve around one of our household favorites, Biscoff. Stinking Biscoff. That stuff rocks our world. Liege waffles are different than your normal run of the mill waffle. In fact you really should forget about the taste and texture of the normal breakfast waffle because this one is seriously a totally different taste, but delicious like you wouldn’t believe. I think I’ve tested a trillion versions, and when I had it almost perfected I stumbled upon I’m Topsy Turvy’s site who’s recipe was so similar to mine I decided to combine the two. She’s a genius anyway, of course her recipe would be bomb diggity. Liege waffles are made by proofing yeast in a butter and milk mixture. Proofing yeast is really just a fancy term for letting the yeast grow and get all poofy. You do have to be careful because too hot or too cold of liquid can kill the yeast so make sure you get warm water and I always add a little sugar for the yeast to feed on and grow. Next you’ll mix everything together and allow the dough to rise in a warm place, covered with a light towel or saran wrap. I love this part. I’ve always thought that risen dough is so pretty. It gets so pillowy and soft looking.
Now this part is especially important, and you must buy a special ingredient because normal sugar just won’t work. You’ll want to buy Belgium (there’s Swedish too, but it’s smaller than the Belgium sugar) Sugar which you can find at specialty or natural food stores. In Utah we buy our sugar at Orson Gygi. You can totally buy online too. Once the dough has risen knead in the Belgium sugar and section off 8 to 10 balls. It looks a little funny, but it’s necessary to create the perfect Liege waffle. And I know it’s a little odd to put a clump of dough as opposed to a runny batter in your waffle maker, but it will spread out a little when you close the lid. We use a Hamilton Beach Waffle Maker and we cook our Liege waffles a little longer than a normal waffle on a slightly lower temperature so as to not burn the sugar, but you will have to just try out your waffle maker and experiment with how long to cook it. The sugar will kind of melt into the waffle and crystalize like little sugary nuggets of goodness. It’s awesome. Then pull the waffle out and top however you’d like, but we think that spreads compliment the waffle much better than a syrup because of how dense the yeasted waffle is. We like to stick with what we love from the Waffle Truck, Biscoff, whipped cream and berries. But, you could do just whipped cream, nutella, peanut butter or anything you like!

Either way, can we just dig in to this delicious Copycat Waffle Love Liege Waffle Recipe?

  4. In a large bowl whisk together the flour, salt, baking soda, and baking powder. Place the oats in the blender and grind until fine. It will be okay to have some larger pieces of oat left. Whisk the oats into the flour mixture and then with the mixer on low speed, slowly add the flour mixture into the sugar mixture.
  5. Place the frozen chocolate bars into the blender and pulse to grind. The chocolate should resemble small pebbles.
  6. With the mixer still on low add in the ground chocolate, chocolate chips, M&M'S raisins, mini chocolate chips, toffee bits, mixing until just combined.
  7. Using a large cookie scoop, scoop the dough onto the prepared baking sheet and bake for 10-12 minutes until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes and then transfer to a cooling rack.
  8. Store airtight for up to 3 days.

Sparkly Lumps of Coal Oreo Truffles are really easy to make so you can step back and let the kids have fun then devour them while their asleep… or share.

I’ve always been taught, even while I was a child myself that we should look to children and be like them. Children are humble, teachable, forgiving and so innocent. Can you imagine if people of the world chose to be like that? Love solves all things and children are full of it for sure. We were busy making sparkly lumps of coal oreo truffles for the neighbors when our youngest daughter taught us something important.

We had just processed the oreos into a fine crumb and we were adding the cream cheese to make the truffles when she asked why we were making coal. I explained it was just a funny and delicious gift for the neighbors because we always say to be good or Santa will put coal in your stocking. She let it go and I stuck the truffles in the fridge to make them easier to work with. She ran off to play and 30 minutes later I called the girls back to roll the truffles.

So there we were, rolling truffles, dipping them in chocolate and rolling them in sparkly sprinkles when she brought it up again, “why does Santa bring coal sometimes?” Cade explained that if you weren’t a good girl that instead of toys and goodies Santa would only put coal in your stocking. She sat and pondered for a moment while using a spoon to scoop the sprinkles all over the truffles, her eyes full of light as thought on things.

Suddenly she said, “but guys, coal let’s you make fire to keep you warm during the cold winter, so even if Santa gave a little kid coal it still means he loves them and wants them to be happy because he gave the child something to stay warm.”

And that my friends is why we are so blessed to have such optimistic, happy children. I’ve had a new outlook this holiday season, find the blessing in the trial no matter what because it still means He loves you.

Oreos all ground up with cream cheese and rolled into perfect truffles then dipped in chocolate and sparkly black sprinkles to look like coal.
Ingredients
  • 1 Package Oreos
  • 8 Ounces Cream Cheese, Softened
  • 1 Block Milk Chocolate Dipping Chocolate
  • 1 Container Black Sugar Sprinkles
Instructions
  1. In a food processor, add the oreos and process until they are completely broken down. Add the cream cheese and process until smooth. Scoop into a bowl and refrigerate for 20 minutes.
  2. Place parchment paper on a cookie sheet.
  3. Scoop rounded tablespoons of the dough into your hands, and roll gently into clumps. Don't worry about getting them perfectly round as the more clumpy the more like real coal.
  4. Meanwhile, melt down the chocolate in the microwave in 30 second intervals, stirring each time until smooth. Allow to cool for a minute.
  5. Place sparkly sugar in a dish.
  6. Using a fork, drop a truffle in the chocolate and roll over to coat entirely. Gently lift out the truffle and balance the fork on the edge of the measuring cup so the chocolate can drip off and set just a little. Drop in the sugar and use a spoon to scoop the sprinkles all over the truffle. Gently lift with the spoon to the baking sheet to set. Repeat until all truffles are used.
  7. Store in an airtight container in the fridge or very cool place. Eat within a day and do not allow them to gather condensation or they will sweat the black dye.

I was in 7th grade and it was a Monday. It was probably raining, or drizzling, possibly pouring. Yes, those are all different things. You know that if you’re from the PNW- the Pacific Northwest. Pacific  jr high was a buzz with activity and I was clueless. The Super Bowl had been the day before but we never watched sports on Sunday so I didn’t know who had won.

Already an awkward 12, almost 13 year old I didn’t want to be laughed at more so I joined in, “yeah, what a game!! Oh that commercial was hilarious!!” I didn’t know what in the heck I was talking about.

Years later and we still don’t watch the super bowl because we try to keep Sunday a special day without those outside distractions, obviously a personal choice. But we do love football so we still eat well that day. We’ve really been enjoying these parmesan herb pretzel nibblers lately. So. Stinking. Easy.

Gingerbread Bundt Cake with Maple Glaze

Gingerbread Bundt Cake – A deliciously moist and fluffy ginger-spiced molasses cake drizzled with a pretty, sweet maple glaze.

Nothing beats the warm, comforting flavours of ginger and molasses during the holidays, so today I bring you my deliciously moist and fluffy Gingerbread Bundt Cake!

This is a quick and easy cake recipe that requires no mixer, because you’ll be using melted butter instead of creaming the butter and sugar together. This recipe calls for cake flour to create a beautifully light and fluffy cake, and Greek-style yoghurt to add incredible moisture.

The spices used in this cake are ginger, cinnamon, and nutmeg. All my favourite autumn flavours together in one cake. A nice, big slice would go perfectly with a hot cup of tea or coffee!

Enjoy!

Every party needs something sweet, something salty, something light and something indulgent. This ranch slow cooker chex mix is both salty and addicting!

This post is sponsored on behalf of Glad and Hidden Valley Ranch. All opinions are our own.

What is it about a big bowl of snack mix that’s so irresistible? It doesn’t matter that I literally just finished a meal, or dessert, or both, I see a big bowl full of a sweet or salty snack mix, much like this ranch slow cooker chex mix and something in me awakens. Must. Try. It!

We ran off to Walmart the other day as I needed a few decorations and baking needs for an upcoming holiday party and I didn’t want to drive all over town, getting myself and a baby in and out of the car for hours. One stop was all I had the energy for. While inside I noticed a little package of oyster crackers. Yes, oyster crackers.

Our oldest daughter got it in her head that she wanted some with chicken soup, but I continually forgot to buy them. Well, I tossed them in the cart, the way we all do and then I noticed a box of Cheez-it crackers on sale so suddenly I was tossing that in too, and heck, if the pretzels are 2/$3 why the heck not?!

Just as I was about to check out I realized if I was going to buy this I better make it into something for the party. Someone had ditched a roll of Glad® Press’n Seal® by the bin o’ movies  and suddenly I knew what to do. A snack mix in the slow cooker and I could cover our counter with the Press’n Seal so they could dry and I wouldn’t have to clean again.

That’s my thing. When we have a party I do as much prep work ahead of time as possible so the party is never a stress and I can enjoy it. Slow cooker is a great option to set and forget and the Press’n Seal not only allowed the crackers to cool without pulling out a pan, but I also threw the snack into the serving bowl and covered it so I really was ready without needing to fill dishes and arrange food.

Each item is needed as the pretzels bring the salty but in a different way. Yes, size and shape actually do make an impact on the end result of a dish. The oyster crackers were buttery pillows, the cheez-its perfectly cheesy, the corn Chex give an overall fall harvest vibe and the peanuts get a little more round and add a totally different feel in the mix.

Pull out your Hidden Valley® Ranch packet  that I know you have lying around from making our 3 ingredients slow cooker roastit’s the ranchiest so don’t you dare not use it, mix it with a little sugar and Karo syrup to create a nice, crunchy coating, oil for the roasting and worcestershire which will really pump up the savory factor. Pour everything in the slow cooker, stirring occasionally, pour out to cool on two pieces of Glad Press’n Seal up to 2 days ahead of time (see, get it done early!!) then store everything in the serving bowl (how fun is this one?!) with Press’n Seal over the top. Discard the plastic from the table.

You are going to be munching on this stuff all day until your guests arrive, just to warn you! Hide that stuff where you wont be tempted!
