Have you ever had a totally awesome salad? I realize that sounds like a kind of lame question to be asking, but lately we feel like we head out to a restaurant or gathering and the salads are always super lame. That’s a big deal for me as I am a huge connoisseur of salads and Cade is quickly becoming the same. I just get served a lot of iceburg with croutons (not knocking the crouton because it is beloved bread for heavens sake) and I need more! I need flavor, and I need it to be more than just water. Hence the pomegranate raspberry dressing salad I’m about to show you.

Iceburg lettuce has its place for sure, hello wedge salad of awesomeness. In fact, I saw one over on Foodie Crush that made my heart burst. Did you click the link? Doesn’t it look yum?! Anyway, the point is I know it can be awesome but often I’m looking for a salad with real greens, and real mixins. Oh, Caesar salad. That’s another one I’m ok with iceburg. 🙂

But seriously, stay focused. This salad has power greens from Costco which we not only use in our smoothies but we love the flavor that they give to a salad. The are all deep in color so it’s healthier and the flavor isn’t anything harsh or bitter. Just really dang good lettuce.

Then throw in a little grilled asparagus which we’ve seasoned with Johnny’s Garlic Spread because it adds a little warmth to the savory ingredients, cheese, peas, cucumbers, berries, tomatoes, grapes and those killer lemon almonds and top the whole party off with a sweet and bright pomegranate raspberry dressing.

Stinking awesome. And you can show up to your next potluck with something awesome versus a bagged salad.

Pomegranate Raspberry Dressing Salad

Ingredients 

  • 1 Bowl Power Greens or any dark greens
  • 1/2 Bunch Asparagus, ends chopped off, Plus 2 tablespoons Johnny's Garlic Spread and EVOO
  • 1/2 Cup Peas, steamed and cooled
  • 1 Cup Cucumbers, chopped
  • 1 Cup Grape Tomatoes, chopped
  • 1 Cup Grapes, sliced
  • 1 Cup Raspberries
  • 1 Cup Strawberries
  • 1/2 Cup Dubliner Cheese, chopped
  • [Lemon Brown Sugar Almonds]

Pomegranate Dressing

  • 1/2 Cup Canola Oil
  • 1/4 teaspoon Lemon Zest
  • 1/2 Cup Pomegranate Juice
  • 1/2 Cup Lemon Juice
  • 1/3 Cup Raspberries
  • 1/8 teaspoon Ground Ginger
  • Pinch Salt

Instructions 

For the Salad

  • Heat the grill to medium high heat and toss the asparagus in the olive oil and garlic spread.
    1/2 Bunch Asparagus
  • Grill until char marks appear and they are tender.
  • Allow to cool, chop into 1 1/2" pieces and set aside.
  • Toss all of the salad ingredients together in a large bowl.
    1 Bowl Power Greens or any dark greens, 1/2 Cup Peas, 1 Cup Cucumbers, 1 Cup Grape Tomatoes, 1 Cup Grapes, 1 Cup Raspberries, 1 Cup Strawberries, 1/2 Cup Dubliner Cheese, [Lemon Brown Sugar Almonds]

For the Dressing

  • Place all of the ingredients in a blender and pulse until smooth.
    1/2 Cup Canola Oil, 1/4 teaspoon Lemon Zest, 1/2 Cup Pomegranate Juice, 1/2 Cup Lemon Juice, 1/3 Cup Raspberries, 1/8 teaspoon Ground Ginger, Pinch Salt
  • Serve with salad.
